Ingredients
Scale
2 cups cooked, shredded chicken (can substitute with rotisserie chicken for ease)
4 cups mixed salad greens (or try spinach for a nutrient boost)
1 cup shredded carrots (for sweetness and crunch)
1/2 cup bell peppers, thinly sliced (use a mix of colors for visual appeal)
1/4 cup red onion, thinly sliced (adds a zesty bite)
1/2 cup fresh cilantro, chopped (for an aromatic accent)
1/4 cup roasted peanuts, chopped (offers a beautiful crunch)
1/2 cup Thai peanut dressing (store-bought or homemade)
Juice of 1 lime (to brighten the flavors)
Instructions
Step 1: Prepare the Chicken – Heat a skillet over medium heat with a drizzle of oil. Season the chicken with salt and pepper, and cook until golden brown, about 5-7 minutes per side. Once cooked, allow it to cool, then shred it using two forks.
Step 2: Mix the Vegetables – In a large bowl, combine the mixed salad greens, shredded carrots, bell peppers, red onion, and cilantro. Toss gently to mix the colors and textures.
Step 3: Add the Chicken – Add the shredded chicken to the vegetable mixture. The warm chicken slightly wilts the greens, adding to the overall flavor.
Step 4: Dress the Salad – Pour the Thai peanut dressing over the salad mix and squeeze in the lime juice. Toss everything together until well-coated in the sauce.
Step 5: Garnish and Serve – Top the salad with chopped roasted peanuts. Serve immediately or let it chill in the fridge to meld the flavors.
