1 cup graham cracker crumbs
2 tablespoons sugar
1/4 cup unsalted butter, melted
8 oz cream cheese, softened
1/2 cup sugar
1/4 cup sour cream
1/4 cup white chocolate, melted
2 eggs
1 teaspoon vanilla extract
1 cup fresh blueberries (or frozen, thawed)
Instructions
In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Line a cupcake pan with paper liners and distribute the mixture evenly, pressing it into the bottom. Bake at 350°F (175°C) for about 8 minutes.
In another bowl, beat the softened cream cheese and sugar until smooth. Add the sour cream, melted white chocolate, eggs, and vanilla extract; beat until fluffy.
Gently fold the fresh blueberries into the cheesecake mixture.
Pour the mixture over the crust in each liner, filling about 3/4 full. Bake for 20-25 minutes until set but slightly jiggly. Cool for 10 minutes in the pan.
Chill the cupcakes in the refrigerator for at least 2 hours before serving.
