½ cup unsalted butter, melted
¼ cup granulated sugar
16 oz cream cheese, softened
1 cup creamy peanut butter
1 cup powdered sugar
1 tsp vanilla extract
3 large eggs
1 cup strawberry jam
½ cup whipped cream (for garnish)

Instructions
In a medium bowl, blend the graham cracker crumbs with melted butter and granulated sugar until well combined. Press this mixture into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for about 10 minutes.
In a large mixing bowl, beat the softened cream cheese with creamy peanut butter until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until fully incorporated. Add the eggs one at a time, mixing on low until just blended.
Pour the filling into the prepared crust and smooth the top with a spatula. Bake for about 60 minutes, or until the center is set with a slight jiggle. Allow the cheesecake to cool at room temperature for an hour, then chill in the refrigerator for at least four hours or overnight.
