1 medium head of cauliflower, chopped into florets
8 oz fresh mushrooms, sliced
4 cloves of garlic, minced
3 tablespoons olive oil (or avocado oil for a lighter option)
Salt and pepper to taste
1 teaspoon dried thyme (fresh thyme works well too)
1 tablespoon lemon juice for brightness
Optional: a sprinkle of Parmesan cheese or nutritional yeast for a vegan twist
Instructions
Heat the olive oil in a large skillet over medium heat. Add the cauliflower florets and sauté for about 5-7 minutes, stirring occasionally, until they begin to soften and turn golden brown.
Once the cauliflower is beautifully golden, stir in the minced garlic and sliced mushrooms. Allow them to cook for another 5 minutes or until the mushrooms have released their moisture and become tender.
Sprinkle the thyme, salt, and pepper over the skillet. Stir well, allowing the flavors to meld together for another 2-3 minutes.
Remove the skillet from heat and add a splash of lemon juice. Stir well and serve hot!
