  • 1 package (about 16 oz) ravioli of your choice (fresh or frozen; butternut squash or ricotta are excellent choices)
  • 2 tablespoons olive oil for sautéing
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh or frozen spinach
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste
  • Fresh basil, optional, for garnish

  • Cook the ravioli according to the package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the sun-dried tomatoes and stir for another minute.
  • Toss in the spinach and cook for 2-3 minutes until wilted. If using frozen spinach, make sure it’s fully thawed and drained before adding.
  • Pour in the heavy cream and bring to a simmer. Stir in the Italian seasoning, salt, and pepper. Allow the sauce to thicken for 5-7 minutes while stirring occasionally.
  • Add the cooked ravioli to the sauce, gently tossing to coat each piece. Finish with the grated Parmesan cheese and mix until melted and creamy.
  • Serve hot, garnished with fresh basil if desired.
