  • 1 cup sour cream or Greek yogurt
  • 1 cup breadcrumbs (panko works great!)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1 teaspoon Italian seasoning

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the broccoli, bell peppers, carrots, cauliflower, and corn. Toss them together to mix evenly.
